So this happened.
It all started with a text from my brother at exactly 00:55 yesterday morning..
Can you make cookies tomorrow?
I feel like eating cookies.
But these aren’t any ordinary cookies you see- these are filled with both Nutella AND Peanut Butter. Oh yes, you read that right!
Choco Chip Cookies with Nutella & Peanut Butter filling
Servings: 12-15 cookies
1 cup (115g) melted unsalted butter
1 cup (225g) of caster sugar (or half brown + half caster sugar)
½ tsp vanilla extract
½ tsp sea salt
½ tsp bicarbonate of soda
1 ½ cups (180g) plain flour
1-2 cups choco chips (I didn’t have any in hand so I chopped up a bar of dark chocolate)
Chilled Nutella and Peanut Butter (I love love love Whole Earth‘s peanut butter!)
Preheat the oven to 180º C.
Mix the melted butter and sugar in a large bowl by hand, then stir in the egg.
Add the vanilla extract, salt and bicarbonate of soda until well combined. Stir in the plain flour in two parts and chocolate chips until the dough comes together.
Chill the cookie dough in the fridge for at least an hour or if you’re impatient, half an hour in the freezer.
Take a big tablespoon full of cookie dough and flatten it out into a small disk.
Now place half a teaspoonful of chilled Nutella and another small teaspoon of peanut butter into the center. Pinch the seams together and roll into a ball.
Place your cookie dough balls onto a lined baking tray with plenty of room between each as they will flatten and spread.
Bake one dozen at a time for 10 minutes until golden brown. Once out of the oven, let them cool in the tray for a couple of minutes, then transfer onto a cooling rack for another 2 minutes before serving.
Pour yourself a glass of cold milk and enjoy them while they’re still slightly warm.
